Agave Tequila

All tequila must be made of at least 51 percent blue agave juices. It must also be made from Mexican blue agave found in the 180 municipalities authorized by Mexico to produce tequila. These regions include all municipalities in Jalisco and some in Guanajuato, Michoacan, Nayarit and Tamaulipas States. Premium tequila is made of 100 percent blue agave and must not only be made in these regions, but must be bottled at the distillery as well.

Agave itself is an indigenous succulent plant. It is not a cactus as some believe, and there are over 100 varieties of the plant in Mexico and some places in the southern United States and other parts of the world. Tequila is made from distilled sap from the hearts of the blue agave. If a liquor is made from anything other than the blue agave, it is not tequila.

A Little History
The leaves of the blue agave were originally used to make roofs, rope and paper among other things. It was even used medicinally. In the middle of the 16th century, Spanish conquistadors saw that native Mexicans would also chew the sweet heart of the plant. Around this time, the Spaniards thought to distill it, in an effort to create a brandy-like drink. It took some time, however, before the drink was recognized legally by Mexican authorities, and so tequila began as a clandestine pleasure. It wasn't until the 17th century that the Mexican treasure, in need of funds, saw it could tax the popular drink and fill its coffers.
