Cognac XO

Cognac XO is the top of the cognac line. Each individual distillery will have its own XO cognac. Cognac itself is a premiere spirit made in the Cognac region of France; it is the "eau-de-vie" (water of life) as the French call it. It is distilled in wooden barrels for a minimum of six and a half years, according to the laws of the region.

During the distillation process, the barrels will be moved to different areas for changes in climate, humidity and angle of fermentation. It is this process that gives each cognac its distinct flavor. An XO cognac will most likely be more than 30 years old. It is only after 20 years that a cognac will truly begin to find its own flavor.

A Sophisticated Drink
Cognac is a sophisticated spirit for the sophisticated drinker. It is meant to be sipped and savored. It can get very expensive, though those in the know will tell you it is worth every penny. Cognac XO is typically enjoyed straight, as an after-dinner drink to complete a fine meal. Its richness of both taste and aroma make it a course in and of itself.
